Shakshuka Recipe

Do you want something super easy and cook to quick, but full of flavourful spices? If so you should give this recipe a go!





Ingredients: (One serving)

1 white onion

1/2 bell pepper (Any colour is fine)

Small handful of spinach

200g of chopped tomatoes

Two medium eggs

1/2 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon garlic

1/2 teaspoon of cayenne pepper (optional)

Feta cheese (optional)


Method


1. Chop the white onion and bell pepper with a knife.

2. Put the vegetables in a pan on a medium-high heat. Cook until the onions become translucent. This normally takes five minutes.

3. Shred the spinach and place in the pan along with the cumin, paprika and garlic. You can also add cayenne pepper if you want more spice. Allow to cook for 1 minute.

4. Next, place you chopped tomatoes into the pan and bring the heat down to a simmer. Allow to cook for 8 to 10 minutes until the tomato sauce has thickened.

5. In the pan, create two small holes or wells in the mixture and crack the eggs into the holds,

6. Cover the pan with a lid and cook until the egg whites set. This can take 6 to 8 minutes.

7. Uncover and start to serve. As an optional topping, you can add feta cheese.
